Spicy Mexican rice (main dish)

Cayenne pepper paste

Olive oil 1tbsp
Bell pepper red or orange small 1
Garlic 3
Chopped onion 1 small
Vinegar 1tsp
Tomato 1
Salt to need
In a oil saute all this ingredients one by one and paste this mixture in a blender


(For rice)
Olive oil 2tbsp
Rice 1 cup
Jalapeno 2 finely chopped
Bell pepper red or orange thinly sliced 1
Tomato 2 chopped
Chickpea (kondaikadalai)tinned or fresh boiled  half cup
I used black chickpeas
Cayenne pepper paste 2 tbsp
Vegetable stock with water 2cups
Cumin powder 1tsp
Coriander and mint leaves
Sunflower seeds and salt



1 Heat olive oil in a heavy bottom pan over medium high heat
2 add rice and stir constantly.
3 add jalapeno and red pepper stir 2 to 3 min
4 add tomato ,chickpea,and cayenne paste and stir 2min
5 add stock water,cumin and salt 6 stir well reduce low heat and cover the lid and cook 10 to 15 min
7 now add coriander leaves mint leaves and sun flower seeds
8 in a low flame cook untill fluffy


Preparation time 15min
Cooking time 45 min
Serve 4


Note 1
If u need more spicy u can use ginger paste green chillied chilli powder
Note 2
If u use red colour in cayenne paste u can use orange colour in rice
